Originally, I wanted to make some chicken croquettes for a few days in the mountains, but I was in such a hurry, that I decided to simply make all the breading in a single bowl. And while throwing the chicken pieces in the bowl, it came to my mind how much Andrei likes Shanghai chicken so I added some sesame seeds too and a wonderful recipe turned out of it.
I wanted to share it with you, because I’m sure there are many days when you don’t have much time for cooking and this is a delicious and quick recipe.

Ingredients:

• 1 chicken breast
• salt, pepper, paprika, garlic powder and onion powder for the chicken marination
• 2-3 eggs (depends on the size of the breast and type of almond meal)
• 1 cup almond meal
• 1/4 cups hulled sesame seeds

Cut the chicken breast into longer strips or pieces in preference and pound them easily with a meat mallet, then leave them to marinate.
In a separate bowl, beat the two eggs with a little Himalayan salt then add the almond meal and sesame seeds.
Put the marinated chicken pieces into the breading and roll them around well with a fork.


Heat some pure, flavourless and odourless cold-pressed coconut oil in a pan.
Fry the chicken pieces well on both sides.

You can serve them right away, hot or cold – they are ideal for hiking because they are filling and unassuming.
